Recently, I tried out this fabulous recipe from Annie's eats to make strawberry cupcakes!! They turned out SO good that I ended up giving away most of them to friends and Chris's coworkers so I wouldn't eat the entire batch myself. Haha!
I didn't try my hand at the icing recipe though, since that seemed a little out of my skill set at the moment. (This was actually my first time making cupcakes from scratch!!) Instead, I used Pillsbury's strawberry creamy supreme frosting, which was very yummy - a little overly sweet but it worked well with the cupcakes since they had a more natural and subtle sweetness. Someday I will try out making my own icing though!
This recipe is kinda huge! I got 24 cupcakes out of it and 6 double layer heart shaped mini cakes. I'm a huge fan of strawberry cake though, and it is hard to find a good slice or cupcake of it... so the more the merrier! (As long as I have good company to share it that is!)
I served the two cupcakes with strawberries on top with dinner recently, and it paired nicely with Sofia sparkling wine. The cupcakes were a rich, buttery sweet and balanced deliciously with the dry bubbly wine.
I totally recommend this recipe if you are a strawberry cake fan, or cupcake fan in general! Chopping all the little strawberries is kinda hard work, but its so delicious and worth it! <3
